Chicken Breast Delight
Chicken Breast (as many as you want to prepare)
3 or 4 large onions (more if you like fried onions a lot)
Pizza sauce ( with a little white or brown sugar) (not enough to make it real sweet)
Bacon (enough for 2 pieces per chicken breast)
Shredded Sharp Cheddar Cheese and Monterey Jack Cheese
3 to 4 TBSP. Olive Oil (you can use almost any oil but the olive oil is nice)
Bake the bacon on broiler rack in oven at 350 degrees, until very crisp this can be done ahead of time even a day ahead of time if you want to.
Have chicken breasts (UN-BREADED) ready to fry in Olive Oil, cut up onions in med. chunks or slices and start them frying in the olive oil, add the (UN-BREADED) chicken breast cook and season with salt, (and pepper optional) on med. high heat turning occasionally until done and browned slightly. Take chicken breasts out of the onions (save the onions, to garnish later) and place in a 9 X 13" baking pan or one large enough that you have enough space so they do not have to be stacked on top of each other. Spread aprox. 1 TBSP. pizza sauce to each piece of chicken and add 2 pieces of the crisp bacon on top of each chicken breast, now add the onions on top of the bacon evenly distributed and top with shredded cheddar and Monterey jack cheese. Place in a 300 degree oven until the cheese is melted and serve. If you want to make it extra fancy you can top it with parsley or use your imagination. This is a very easy dish to make and is very nice if you have guests. Hope you enjoy!
