Good & Healthy Chicken
2 cups bite size shredded wheat cereal, crushed to 1 cup
1/2 cup fat free or veggie parmesan cheese
1/2 tsp. seasoned salt
1/4 tsp. paprika
1/2 tsp. garlic powder
1/2 cup fat free whipped dressing (such as Miracle Whip)
1 TBSP. olive oil
1 TBSP. honey
2 tsp. prepared mustard
4 pieces boneless skinless chicken breast
Preheat oven to 325 degrees F. combine cereal, parmesan cheese, seasoned salt, paprika and garlic powder. Combine whipped dressing, honey and mustard. Roll chicken strips in whip dressing mixture; then roll in cereal mixture to coat evenly. Place on rack in 9X13 pan. Bake about 1 hour or until chicken is no longer pink in center. Makes 4 generous servings. If you want to make it look festive, top with parsley or chopped chives. Enjoy!
